属于酸类,味道也是酸酸的。没食子酸(英语:Gallic acid)亦称五倍子酸或棓酸,是一种有机酸,可见于五倍子、漆树、茶等植物中。据国外文献记载,没食子酸最早由舍勒制得(1786)。但古代中国早在这以前就有明确记载。
《本草纲目》卷39中则有“看药上长起长霜,则药已成矣”的记载。这里的“生白”“长霜”均为没食子酸生成之意,是世界上最早制得的有机酸,比舍勒的发现早了二百年。酸水解法主要分一步法和二步法。二步法制备没食子酸的主要工艺流程:原料→热水浸提→滤除滤渣→单宁水溶液浓缩到20%左右→加酸水解→冷却结晶→离心得粗品→粗品溶解加炭脱色→过滤后冷却结晶→离心→干燥→没食子酸成品。
尽管反应过滤器和冷冻釜均采用不锈钢制造,但由于反应温度较高,酸浓度较大,腐蚀比较明显,直接影响设备使用寿命。
